Hing, also called asafoetida is an indian spice. I use it in my cooking to mimic the taste of garlic and onions(which aren’t part of the yogic presciption for a peaceful mind!). It’s pretty strong stuff- you just need a pinch to flavour an entire dish. You can buy it at indian stores, and its very cheap. Gluten free hing is hard to get hold of, because generally it is mixed with wheat flour, but it can be found! I know of one shop that sells it in Auckland.
